I've started fancying myself a bit of a Weekend Warrior Princess, with a little help from . Basically anything that can help me and get ahead is well worth a few hours of planning and plotting in the kitchen on Sunday. That's why I love learning how to make these easy homemade freezer pockets, based on our recipe for (learn how to make them perfectly freezable here):

 Pizza for lunch that's not greasy or sad? Sign me up. These are so good, and you can switch up the toppings to suit your preferences.

  Make as directed, cool, then pour into zip-top baggies or individual containers to thaw and reheat during the week.

 Serve over brown rice or quinoa for a filling lunch.

 This one was developed with breakfast in mind, but I love the idea of it as a protein-packed lunch. You can wrap them individually and store in the freezer for up to three months.

The chicken thighs in this recipe have a natural moistness that helps them hold up well to freezing and re-heating.

This is a crockpot superstar, so it's doubly easy: Hands off for cooking, then cool and freeze into individual portions.

 These bad boys contain ground sirloin, but you could easily omit if you're going meatless.
