You get to the farmers' market, and it's hard not to be enthralled by the beautiful produce and family farm vendors. Two hours later, you're coming home with an empty wallet and bags and bags of produce you don't know what to do with. This time of year, that certainly includes tomatoes, and like most seasonal produce, your window for getting maximum flavor is small. Before your prized tomatoes turn to mush, try these recipes to use up your tomatoes in different ways.

Tomatoes and summertime, peanut butter and jelly, cheese and crackers. Some things are just meant to go together. Once summer rolls around, it's all too easy to get excited about the beautiful summer fruits and vegetables. For many of us, that means we buy too many tomatoes. Save your wallet and your mini tomato crop you've accumulated in your kitchen with these recipes that showcase tomatoes in unique ways.

Highlighting yellow, green and red tomatoes, this cold soup can last in the fridge for a few days and makes a great refreshing lunch or light dinner.
