How to Make It
Preheat oven to 325°F. Lightly coat a sheet pan with nonstick cooking spray.
In a large bowl, add dry ingredients; oats through salt. Toss to combine. Set aside.
Heat maple syrup, coconut oil, and molasses in a small saucepan over medium-low. Once coconut oil is melted, remove from heat and stir in vanilla extract.
Pour wet ingredients into dry. Toss to combine. Spread evenly on prepared sheet pan.
Bake for 30-35 minutes, tossing once halfway through, until golden brown and toasted. Allow to cool completely (about 1 hour) before mi in goji berries and butterscotch morsels. Store in an airtight container at room temperature.
